I have been using a spray water bottle and a Staywet Palette. It keeps every thing nice and moist, even on the coastal winds. Also gouache is easily reconstituted just like watercolors. You can put them in a watercolor palette and use them just the same as watercolors. Because they are able to reconstitute, it's a good idea to frame them under glass. They look wonderful with a mat around them as well.
